Small-Step Meal Prep: Easy Turkey & Mushroom Bolognese

Ingredients

  • 1 lb organic ground turkey
  • 1 tbsp avocado oil or olive oil
  • 2 cups sliced portobello mushrooms
  • 1/2 yellow onion diced
  • 3 large cloves garlic pressed or minced
  • 2 15 oz cans tomato sauce
  • 1 15 oz can diced tomatoes
  • 1 tbsp fennel seed
  • 2 tbsp basil
  • 2 tbsp oregano
  • Salt and pepper to taste

Instructions

  1. Add oil and onions to large dutch oven or skillet and sauté over medium-high heat until onions are transparent
  2. Lower heat to medium and add mushrooms and garlic. Sauté for a couple minutes
  3. Add ground turkey and cook until no pink remains
  4. Mix in tomato sauce, tomatoes and all spices. Cover and cook over low heat for 20 to 25 minutes, stirring occasionally
  5. After tasting and adding spices or salt as needed, serve over veggies, mixed greens, or gluten-free pasta
