Baked Margherita Pizza Eggs

Ingredients

  • Coconut oil or ghee to grease muffin tin
  • 8 eggs
  • 1/3 cup coconut milk I use Trader Joe's unsweetened variety in the carton
  • 2 tbsp dried oregano
  • Salt and pepper to taste
  • Fresh basil roughly chopped
  • 1/3 cup pizza sauce NOTE: Go for a clean, sugar-free brand if you're not using homemade.
  • 1/3 cup crumbled goat cheese

Instructions

  1. Preheat oven to 350 degrees Fahrenheit
  2. Spray or grease muffin tin thoroughly with coconut oil or butter
  3. Beat eggs together with coconut milk, dried oregano, and salt and pepper
  4. Using a ladle, pour egg mixture into muffin tin until about halfway full
  5. Spoon about a tablespoon of pizza sauce over each egg, and top with goat cheese and fresh basil
  6. Bake for 20 minutes, or until eggs are slightly crisp on top and no longer "wobbly" (technically speaking)
  7. Let sit for about 5 minutes before serving or storing (NOTE: they may "slump" slightly in the middle because of the pizza sauce, don't worry - they will still taste good!)
