Ingredients

  • 4-5 medium-sized apples peeled and diced
  • 2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup water
  • 3/4 cup gluten-free allergen-friendly flour (my go-to is Namaste Foods Perfect Flour Blend; it's the best cup-for-cup GF flour I've used)
  • 2 tbsp maple sugar
  • 1/2 cup coconut sugar
  • 1/3 cup good-quality butter like Kerrygold

Instructions

  1. Preheat oven to 350 degrees Fahrenheit
  2. Butter or grease baking dish (mine is 9.75 X 8 X 2)
  3. Peel and chop apples, and then toss them with the cinnamon, salt, and water
  4. Place apples at bottom of greased pan
  5. Mix together flour, sugars, and butter in a bowl until all ingredients are combined and it has a doughy texture
  6. Drop spoonfuls of the mixture over the apples, and spread evenly over top with a wooden spoon or spatula
  7. Bake for 35-40 minutes until top is golden brown
  8. Serve straight from the oven, or refrigerate after cooling (TIP: It tastes best warmed up and served with ice cream or greek yogurt)
